    Pomegranate Ginger Beer Mocktail

    This Pomegranate Ginger Beer Mocktail is delicious, perfect for a party or date-night at home! It’s full of complex flavors from pomegranate and honey syrup, orange juice, ginger beer, and hints of fresh rosemary.  So refreshing!

    Mocktails have been popular lately and I’m thrilled to see it.  I love that people are cutting back  (or cutting out) on alcohol consumption. 

    Not only is it better for your sleep and energy level, but it’s just better overall! Since I've switched to alcohol-free cocktails, I feel better than ever! Mocktail cheers, *clink* !

    As much as I love a nice fancy drink, sometimes the juice isn’t worth the squeeze.  Complicated steps? Tons of work? No thank you. 

    I’m all for something functional, quick, and delicious - like this Relaxing Tart Cherry Mocktail or this Tart Cherry and Chamomile Mocktail.  

    This mocktail isn’t complicated.  It’s super easy to make and quick to throw together!

    Just make a simple syrup, then assemble the drink. Easy!

    Ingredients + substitutions

    FOR THE POMEGRANATE SYRUP 

    • Honey - I opted to use honey to make the simple syrup, because the flavors of honey and pomegranate go well together.  However, you can definitely swap the honey for white sugar and make it more of a traditional simple syrup.  
    • Pomegranate juice - you can use store-bought (PomPom is a great choice), or make your own.  I made my own because I had a ton of pomegranates laying around, but normally I would simply buy it! 
    • Rosemary sprig - for some herbal, earthy flavor.  You can swap it for thyme or just leave it out if you don’t have any fresh herbs.  

    FOR THE POMEGRANATE GINGER BEER MOCKTAIL 

    • Pomegranate syrup - cool the pomegranate syrup that you just made.  It’ll thicken slightly as it cools and this will go into your mocktail.  It adds a lot of depth of flavor.  There will be leftovers, you can simply save it in the refrigerator in a mason jar and use it to make more mocktail, to sweeten sparkling water, or to flavor your water.  
    • Orange juice - freshly squeezed or store bought works.  I used blood oranges because that’s what I had on hand, but you can use navel oranges or tangerines.  You could even use grapefruit juice!  
    • Ginger beer - I like Fever Tree because the flavor is unbeatable, but any ginger beer works.  You can swap the ginger beer for ginger ale, or any lemon-lime soda that you like.

    Step-by-step (with photos)

    This is a very easy mocktail to make, just a few fresh ingredients and steps.

    STEP 1: First, make the pomegranate syrup. Combine the honey, pomegranate juice, and rosemary sprig in a saucepan.  Bring it to boil and then simmer it for a couple minutes.  It’ll thicken a little bit as it cools.  

    STEP 2: Make the pomegranate syrup by combining the honey, pomegranate juice, and rosemary sprig to a saucepan.  Bring it to a boil and then turn the heat down and simmer it for 90 seconds.  Remove it from the heat and allow it to cool (it’ll thicken a little as it cools).  

    STEP 3: To make the mocktail, fill a short glass with ice. I used a stemless wine glass.  Add 2 tablespoons of cooled pomegranate syrup to the glass.  Then add the orange juice.  

    STEP 4: Top with a few splashes of ginger beer.  Gently stir it, taste it, then add more ginger beer if you’d like. Enjoy. 

    Variations

    You can absolutely get creative with this mocktail.  And I urge you to use what you have on hand.  

    • Swap the OJ - Don’t have orange juice? If you don’t have orange juice, use whatever juice you have.  Apple, elderberry, grape, guava, grapefruit, lime, lemon, pear, or even pineapple would be a fantastic choice.  
    • Add bitters - make it taste *more* like a cocktail by adding a few dashes of bitters.  Bitters adds a little spice and warmth, perfect for a mocktail!

    What to do with leftover pomegranate simple syrup?

    • Make more mocktails - this simple syrup contains enough to make about 8-10 more mocktails.  
    • Flavor sparkling water - add a teaspoon or two to a glass of sparkling water to give it a little more flavor.  
    • Add it to iced tea - this syrup is a great addition to iced black or green tea.

    • Make the pomegranate syrup by combining the honey, pomegranate juice, and rosemary sprig to a saucepan. Bring it to a boil and then turn the heat down and simmer it for 90 seconds. Remove it from the heat and allow it to cool (it’ll thicken a little as it cools).
    • To make the mocktail, fill a short glass with ice.
    • Then add 2 tablespoons of cooled pomegranate syrup to the glass. Then add the orange juice.
    • Top with a few splashes of ginger beer. Taste it, then add more ginger beer if you’d like. Enjoy.

    Notes

    Store the leftover pomegranate syrup in a mason jar with a tight light in the refrigerator for a week.
