    Quick Grilled Bang Bang Shrimp

    Quick Grilled bang Bang Shrimp is delicious and makes a great party appetizer or main dish! It only takes 15 minutes to make!

    This is one of those recipes that couldn’t be simpler, you just need a handful of ingredients and a hot grill!

    Quick Grilled bang Bang Shrimp is Thai-inspired, and it’s pretty sweet.  I think it’s best served with a savory chicken or steak, as an appetizer or as the “surf” (as in “surf ‘n turf”).

    • Works for salads or meal prep! (just add a veggie and rice!)

    Ingredients

    The ingredients you’ll need include: 

    • Shrimp - peeled and deveined.  Of course fresh is best, but you can use frozen (I did!). 
    • Mayo - since this is going to be the base for the dipping sauce, use a quality full-fat mayo.  
    • Sweet chili sauce - you should be able to find this in the Asian section of any grocery store, or you can get it on Amazon.  It’s sweet and tangy.  
    • Sriracha - made from sun ripened chilis, it’s spicy, but it won’t make your sauce too spicy.  
    • Rice vinegar - for a little extra tang.

    The process

    In a small bowl, whisk together the mayo, sweet chili sauce, sweet chili sauce, sriracha and rice vinegar.

    Toss half of the mixture with the shrimp.  Cover the other half, and place it in the refrigerator for serving.

    Thread the shrimp on skewers.

    Grill for 3 minutes on each side.

    Serve the leftover bang bang sauce on the side.  

    Substitutions

    • Shrimp - you can swap the shrimp for scallops or chicken, just be sure to adjust the cooking time based on whatever you choose.  
    • Mayo - you can use full fat greek yogurt in place of mayo.  
    • Sweet chili sauce -  you can actually swap this for apricot or orange jam! Sure, it’ll taste a little bit different, but it’ll be delicious.  
    • Sriracha -  any hot sauce will work in place of sriracha but for asian-inspired recipes sriracha is always a solid choice. 
    • Rice vinegar - you can swap the rice vinegar for white vinegar.

    Tips

    Taste the bang bang sauce. Ingredients, depending on brand, can vary and give you a scale of flavor.  Taste it and don’t be afraid to adjust it to fit your preferences.  For example, if it’s too tangy add a pinch of white sugar.  If you like it spicier–add more sriracha! Don’t be afraid to play around and customize the recipe.

    Ingredients
      

    • 1 lb shrimp peeled and deveined
    • ¾ cup mayo
    • 3 tbsp sweet chili sauce
    • 2 tsp sriracha hot Chile sauce
    • 1 tsp rice vinegar

    Instructions
     

    • Clean, peel and devein the shrimp.
    • Preheat your grill to 375 degrees Fahrenheit.
    • In a small bowl, whisk together the mayo, sweet chili sauce, sweet chili sauce, sriracha and rice vinegar.
    • Toss half of the mixture with the shrimp. Cover the other half, and place it in the refrigerator for serving.
    • Thread the shrimp on skewers.
    • Grill for 3 minutes on each side.
    • Serve the leftover bang bang sauce on the side.
