With pumpkin spice season upon us, it’s time to whip up this quick Pumpkin Spice Syrup (Starbucks Copycat!) and keep it in your fridge for seasonal fall beverages.
This Starbucks Copycat Pumpkin Spice Syrup is a recipe that you won’t want to miss!
Everyone loves the famous PSL (Pumpkin Spice Latte) at Starbucks. Not only can you make one at home with this simple syrup, but you can also add it to your iced coffee for a quick hit of flavor.
And then top that coffee with pumpkin sweet cream cold foam for an extra special fall treat.

Ingredients + substitutions
- Filtered water - tap water isn’t the best choice because it has all kinds of unsavory flavors due to chlorine and whatever else is in your tap water. I definitely recommend using filtered or bottled water.
- Dark brown sugar - dark brown sugar gives this syrup a deeper, richer flavor, but you can use light brown sugar if you’d like.
- Pumpkin purée - 100% canned pumpkin puree is best, I don’t recommend using pumpkin pie filling because it will not taste the same.
- Pumpkin pie spice - I used store bought but if you wish to mix your own combine: 1 ½ tsp ground cinnamon, ¼ tsp ground ginger, ¼ tsp ground nutmeg, ⅛ tsp ground cloves
- Vanilla extract - for flavor
The process
Add all of the ingredients except the vanilla extra into a saucepan over medium heat, bring it to a simmer.
Whisk until the sugar is dissolved (about 5 minutes).
Then remove it from the heat and add the vanilla extract.
Strain through a cheesecloth to get rid of the grittiness from the spice (or skip this step if that kind of thing doesn’t bother you).
Let it cool to room temperature and use it in hot or iced coffee.
Storage
Store in an airtight container or a mason jar for up to 3 weeks. It'll probably last longer in the fridge, but just use discernment. If it doesn't look or smell good, throw it away and make a new batch.

Coffee or Tea: Add pumpkin spice syrup to your morning coffee or tea for a delicious fall-inspired flavor! Hot or iced, it doesn’t matter, this syrup is magical.
Baked Goods: Incorporate pumpkin spice syrup into your baked goods, such as pumpkin spice muffins, pancakes, waffles, cookies, or cakes. It adds a burst of pumpkin flavor!
Smoothies: Enhance your smoothies by adding a splash of pumpkin spice syrup. It blends well with fruits like banana, apple, or pear, giving your smoothie a seasonal touch.
Ice Cream Topping: Transform your ice cream into a fall dessert by topping it with pumpkin spice syrup. The warm, spiced flavor complements the coolness of the ice cream.
Expert tips
While this is totally optional, I recommend buying cinnamon sticks in bulk and adding a stick or two to your syrup while it simmers. It adds a deep, intense cinnamon flavor, and there’s really no down side to having a ton of cinnamon sticks around!
