    Pumpkin Spice Boba Milk is a fun fall drink that you’re going to adore! Not only is it totally gorgeous but it’s addicting. 

    There's something about those chewy tapioca pearls, swimming around in sweet, fall-inspired pumpkin spice milk…you’ll be hooked!

    What exactly is boba/boba milk/boba tea?

    Boba, also known as bubble tea or pearl milk tea, originated in Taiwan in the 1980s. It was invented by a Taiwanese tea shop owner named Liu Han-Chieh. The concept of adding tapioca pearls to tea came about as a creative experiment to attract more customers. The chewy tapioca pearls, often referred to as "boba," became popular and the trend quickly spread throughout Taiwan and eventually gained worldwide popularity. Today, boba tea comes in various flavors and is enjoyed by many people around the globe.

    Ingredients

    Let’s talk about the ingredients? There are only a handful and you might even have them in your pantry.  

    The only thing you might not have in your pantry are the boba pearls, and you can get those on Amazon or your local Asian grocery store.

    • Boba - you can get boba pearls right here.  They’re simply tapioca pearls, and they’re delicious!
    • Pumpkin Spice Coffee Syrup - whip up a batch of this for this recipe and for your morning coffee, you’re going to love it!  Or use a store bought version, like this one.
    • Milk - any milk that you like will do.  Feel free to use whole milk, 2%, or your favorite plant-based milk if vegan.  Optional toppings: whipped cream, pumpkin pie spice

    FOR THE BOBA

    In a small saucepan, combine the water, boba, and cook according to package directions.  

    Remove the boba pearls from the water, rinse them under cold water, and add them to the pumpkin spice syrup.

    FOR THE DRINK

    Add additional pumpkin spice syrup to the bottom of a glass and the sides of the glass, then add the boba pearls and milk. Give it a stir.

    Top with whipped cream, pumpkin pie spice, and garnish with a few extra boba pearls if desired.

    FAQs

    Can I make boba pearls ahead of time?

    Boba pearls are meant to be made and consumed, you cannot make them ahead of time.  This is a drink that is best made and enjoyed when the mood strikes, there isn’t an option to store it or make it ahead of time. 

    Is boba tea healthy?

    Not really.  

    Boba tea can be enjoyed as an occasional treat, but it is important to note that it is not inherently a healthy beverage. Traditional boba tea is typically made with a base of tea, sweetened with sugar or flavored syrups, and contains tapioca pearls, which are essentially starch balls boiled in sugar water. These ingredients contribute to its calorie and sugar content.

    Is boba milk vegan?

    As this recipe is written it’s not vegan but you can easily make it began by swapping the milk for plant-based milk. 

    What do boba pearls taste like?

    Boba, or tapioca pearls, typically have a mild, slightly sweet flavor. They are chewy and have a gummy texture. The pearls themselves don't have a strong taste but are often infused with flavors from the drinks they are added to, such as milk teas, fruit teas, or flavored syrups. The overall taste of boba tea will depend on the specific ingredients and flavors used in the drink, ranging from sweet and creamy to fruity or tea-infused flavors. The combination of the tea or other beverage, sweetness, and the chewy texture of the boba pearls creates a unique and enjoyable taste experience for many people.

    Ingredients
      

    FOR THE BOBA

    • 2 cups water
    • ¼ cup Boba
    • ¼ cup pumpkin spice syrup *see notes

    FOR THE DRINK

    • 2-3 tbsp pumpkin spice syrup
    • 1 cup milk
    • Optional toppings: whipped cream, pumpkin pie spice

    Instructions
     

    FOR THE BOBA

    • In a small saucepan, combine the water, boba, and cook according to package directions.
    • Remove the boba pearls from the water, rinse them under cold water, and add them to the pumpkin spice syrup.

    FOR THE DRINK

    • Add additional pumpkin spice syrup to the bottom of a glass and the sides of the glass, then add the boba pearls (that are soaking in syrup).
    • Add the milk to the glass. Give it a gentle stir.
    • Top with whipped cream, pumpkin pie spice, and garnish with a few extra boba pearls if desired.

    Notes

    PUMPKIN SPICE COFFEE SYRUP:
    INGREDIENTS
    1 cup filtered water
    ¾ cup dark brown sugar
    3 cup pumpkin purée
    1 tbsp pumpkin pie spice
    1 tsp vanilla extract
    INSTRUCTIONS:
    Add all of the ingredients except the vanilla extra into a saucepan over medium heat, bring it to a simmer.
    Whisk until the sugar is dissolved (about 5 minutes).
    Then remove it from the heat and add the vanilla extract.
    Strain through a cheesecloth to get rid of the grittiness from the spice (or skip this step if that kind of thing doesn’t bother you).
    Let it cool to room temperature and use it in hot or iced coffee.
    Store in an airtight container (a mason jar is best) for 3 weeks.
