    Pineapple Immune Boost Mocktail

    Cheers to feeling amazing and vibrant with this delicious Pineapple Immunity Boosting Mocktail! It’s pack with tropical flavors and immune-boosting ingredients–you’ll love having this in your functional-mocktail rotation!

    As I’ve mentioned many (too many?) times, I love my mocktails to have some kind of functional, body and immune-system supporting ingredients.  This mocktail fits the bill! 

    I love it because it’s not hard to drink, like some immune-supporting teas and drinks.  They can often taste like total dirt and I assure you this mocktail doesn’t taste anything like dirt.  It’s tropical and luxurious, while remaining tasty and complex (you’ll feel like you’re sipping on a real cocktail!). 

    Ingredients + substitutions

    • Boiling water - this is to dissolve the honey, ginger, and turmeric.  You’re making a tea of sorts, but you don’t have to strain anything (unless you want to). 
    • Honey - which has immune-boosting properties due to its antibacterial, antiviral, and antioxidant compounds, it also sweetens your drink and gives it a nice, ever-so-slightly thicker consistency. 
    • Ginger - I like to use fresh, grated ginger, it’s flavorful.  But you can swap it for ¼ tsp ground ginger. 
    • Turmeric - I used ground turmeric because I can’t seem to get turmeric root locally, so ground is best for this recipe because that’s what I’ve tested.  Turmeric is a well-known immune system booster! 
    • Pineapple juice - which is full of vitamins and great for digestion.  It’s also very sweet and gives this drink a fantastic flavor that balances out the zing of the ginger and the bitterness of the turmeric. 
    • Lemon juice + a wedge - lemon is rich in vitamin C, which enhances immune function, fights free radicals, and helps the body fight infections and illnesses. It’s the perfect addition to an immunity-boosting mocktail. 

    How to make it

    • Boil some water, I like to use an electric kettle, but you can boil some over the stove, or even use the microwave to keep things easy.  
    • Then simply add your honey, ginger, and turmeric to the water and stir it.  Allow it to cool off (ideally to room temperature). 
    • Fill a glass with ice and pour the mixture into your cup.  Stir in the pineapple and lemon juice. 
    • Garnish with a lemon wedge and enjoy!  

    TIP: If the grittiness from the ginger or turmeric is going to bother you - feel free to strain it before pouring it over the ice into your cup.  I don’t do this, but you can if you’d like!

    Ingredients

    • ¼ cup boiling water
    • 1 tbsp honey
    • ½ tsp ginger freshly grated
    • ½ tsp ground turmeric
    • ¼ cup pineapple juice
    • 1 tsp lemon juice
    • 1 lemon wedge optional for garnish

    Instructions

    • First boil ¼ cup of water - I like to use an electric kettle but you can use the microwave to make things quick and easy!
    • To the water, add the honey, ginger, and turmeric to the boiling water and stir it. Set it aside to cool until it’s not hot to the touch.
    • Fill a glass with ice and pour the mixture over the ice.
    • Then to your glass, add the pineapple juice and lemon juice. Give it a gentle stir.
    • Garnish with a lemon wedge and enjoy!
