Recently on a solo stroll through Barnes and Noble, I was stopped by a Starbucks poster featuring their new featured drink, the Iced Dubai Chocolate Matcha! I was sold! Say no more, I literally ran to the coffee shop in the corner of the store to order this bevy.
And let me tell you, it was perfect in every way! I fell in love, and I’m going to go back for more as often as I can.
This is an easy, accessible recipe–just so we’re clear, I don’t know how to make “authentic” Dubai chocolate, and this is not in any way a representation of the real thing.
As a matter of fact, it’s so easy and accessible that I got all of the ingredients needed to make this drink at Trader Joe’s. I've told you all about my affinity for my local TJ’s as most of my recipes use their ingredients, it’s my grocery store of choice!
Ingredients + how to make it

Gather all of the ingredients you need: peeled pistachios, water, brown sugar, matcha powder, chocolate syrup, and milk.
First, we’re going to either make a pistachio simple syrup or a sweet pistachio butter (for this recipe I used the latter because it creates a more full bodied pistachio flavor).
- In a saucepan, you’re going to combine filtered water (to avoid any unpleasant flavors), peeled pistachios, and brown sugar.
- Bring it to a simmer and stir until the sugar dissolves.
- Allow it to cool and either strain the pistachios out or blend it in a blender to create more of a “butter” texture.
- Next, dissolve the matcha powder in some hot water (around 195 degrees F if you’re using an electric kettle).
- After that, we’re going to fill a glass with ice, add that matcha and the pistachio syrup or the butter.
- Top with milk.
- Then froth together your milk and chocolate syrup, you can use a hand frother or use an electric one. You could even use a whisk. Some milks froth better than others, keep that in mind, almond milk will not froth up as nicely as whole milk.
- You can garnish the drink with some chopped pistachios, baked and crumbled phyllo, or a drizzle of chocolate syrup. Or all three if you’re feeling it!

Troubleshooting
Milk not frothing?
This is likely due to whatever milk you’re using - whole milk, half and half, and heavy cream will froth very nicely. While the plant milks, not so much. But it’s not a big deal, just froth it as much as you can and pour it on top of the drink. It’s going to be delicious either way.
Don’t want to make the pistachio simple syrup or butter?
Go ahead and buy some from the store, I'll make putting together this drink much easier in the future.
It’s not pistachio-y enough?
This is why I made the pistachio butter rather than the simple syrup. If the texture of a little ground up pistachios won’t bother you, I recommend taking the route of making the butter/paste rather than making it a simple syrup.

I'm a huge fan of alcohol-free drinks, and I'm pretty much addicted to making them. Give one of these awesome recipes a try!
Ingredients
- ½ cup pistachios peeled
- 1 cup brown sugar
- 1 cup water filtered
- 1 tsp matcha powder
- 1 tbsp boiling water preferably from a tea kettle to make things easy
- ¾ cup milk of your choice
- ¼ cup milk for frothing
- 1 tsp chocolate syrup
Instructions
- In a medium saucepan, combine the peeled pistachios, brown sugar, and filtered water. Bring it to a simmer and stir until the sugar dissolves. Remove it from the heat and allow it to cool off a bit.
- Now, you can simply drain the mixture and discard the pistachios and you’ll have a nice, traditional pistachio syrup. However, if you like a lot of pistachio flavor, you can make it into a thick butter by blending it in the blender. From there you can either remove the bumps by pushing it through a strainer or skip that step and just use the butter as it is.
- Next mix the matcha with boiling water and whisk it until it’s smooth.
- Fill a glass with ice, pour the matcha mixture over the ice.
- Add the pistachio paste or an equal amount of syrup depending on your preference.
- Add your milk of choice and give it a gentle stir.
- Froth together your milk of choice and 1 tsp of chocolate syrup. Add it to the top of the drink.
- Drizzle a bit of chocolate syrup on top for garnish if you wish.
