This Peach Mint Shrub Mocktail is the elevated summer drink you’ve been dreaming about!
A shrub is the ultimate mocktail hack for taking your drinks to the next level! Not only is it far more interesting to drink than a regular seltzer, it packs some functional benefits, too!

We still have a few weeks of summer left, and I’m seeing so many October-themed recipes popping up on my discovery pages. And honestly, I am here for it. *Snap, snap.*
That said, we’re not even through hottest month of the summer yet, so I’m going to create just a few more mocktails before it's the cinnamon-roll season. So let's discuss my favorite one yet: this peach shrub!

Why I'm loving this recipe
Shrubs are so cool, they really elevate whatever your bubbles of choice are–whether that’s sparkling water, sparkling tea, lime seltzer, or kombucha. Honesty, shrubs, this one specifically, can elevate a diet coke.
Shrub syrups do take some planning though, but it’s well worth it for the flavor and functional benefits. Because the base is preserved fruit and vinegar, theoretically it will contain probiotics to support the gut.
And if you’ve been following me for any amount of time, you know I’m all for a mocktail friend with benefits situation.
Ingredients + swaps you can do
- Peaches - fresh ripe peaches with the skin on works great. I like to use overripe peaches.
- Sugar - white sugar works best with the flavors for this shrub syrup, but you can of course swap it out for brown, monkfruit, date, or even honey to keep this more natural.
- Mint leaves - mint leaves add some coolness to the flavor of this syrup. You can swap them for basil, thyme or rosemary. Use about 1 tbsp of whatever herb you choose if you’re making a swap.
- ACV - apple cider vinegar with the “mother” is the best choice, but you can swap it out for champagne vinegar or white vinegar.

Here's a quick rundown of how you’re going to make a shrub.
You’re simply going to combine the fruit (peaches, in this case) with white sugar, muddle it up. Toss in some mint leaves. Then add ACV (apple cider vinegar)- preferably the one with the “mother”.
Screw a lid on, shake it around, and store it in the refrigerator for 2-5 days to allow the mixture to macerate.
Then strain the mixture and add 1-2 tablespoons of the syrup to your bubbles of choice, over ice. Then garnish!

Ingredients
- 2 ripe peaches diced
- ½ cup sugar
- 10 whole fresh mint leaves
- ½ cup apple cider vinegar
- 4-5 oz sparkling water *or bubbles of choice
- optional: mint leaves or a lime wedge for garnish
Instructions
MAKE THE SHRUB SYRUP
- In a mason jar, combine the diced peaches and sugar. Muddle until well combined.
- Then add the mint leaves and ACV. Screw the lid on and shake well.
- Store in the refrigerator for 2-5 days to allow the mixture to macerate.
- Strain the mixture into a clean jar and store in the fridge with a tight lid for up to 3 weeks.
MAKE THE MOCKTAIL
- Fill a glass with ice.
- Add 1-2 tablespoons of the shrub syrup.
- Top with bubbles of choice such as sparkling water, lime seltzer, kombucha, or sparkling tea.
