Peach Mint Shrub Mocktail

This Peach Mint Shrub Mocktail is an elevated summer drink that's not only refreshing--but it's also cool, because drinking vinegar is cool in my book!

Ingredients

  • 2 ripe peaches diced
  • ½ cup sugar
  • 10 whole fresh mint leaves
  • ½ cup apple cider vinegar
  • 4-5 oz sparkling water *or bubbles of choice
  • optional: mint leaves or a lime wedge for garnish

Instructions

MAKE THE SHRUB SYRUP

  • In a mason jar, combine the diced peaches and sugar. Muddle until well combined.
  • Then add the mint leaves and ACV. Screw the lid on and shake well.
  • Store in the refrigerator for 2-5 days to allow the mixture to macerate.
  • Strain the mixture into a clean jar and store in the fridge with a tight lid for up to 3 weeks.

MAKE THE MOCKTAIL

  • Fill a glass with ice.
  • Add 1-2 tablespoons of the shrub syrup.
  • Top with bubbles of choice such as sparkling water, lime seltzer, kombucha, or sparkling tea.
