    Cucumber Dill Chicken Salad with Greek Yogurt

    This chicken salad is an elevated version of a classic.  It’s lighter, fresh, and totally satisfying! You have to give this Cucumber Dill Chicken Salad with Greek Yogurt a try!

    I don’t often have time for complicated lunches, but I love having something on hand and prepped for the weekdays.  That’s where this awesome recipe comes in handy - it fits the description perfectly. 

    Not only is it lighter (the mayo is swapped for greek yogurt), but it’s cooling and crunchy with the addition of the cucumber.

    Ingredients + substitutions

    Ingredients needed to make Greek Yogurt Chicken Salad.
    • Dressing - full fat Greek yogurt, olive oil, dijon mustard, lemon juice, dill, honey, pepper, salt. The greek yogurt as the base of this dressing gives it a cooler, fresher, tangier flavor.  If that’s not your thing you can certainly swap it for mayo. 
    • Chicken - be sure to use cooked chicken, remove any bones.  I like to use rotisserie chicken, but you can use any leftover chicken that you have on hand. 
    • English cucumber - use any cucumber but I like english cucumbers because they have fewer seeds, thinner seeds, and a nicer texture.  
    • Celery - this is just a classic ingredient in chicken salad, you can use more or less bases on your preference but since we have the crunchy cucumber I find that we don’t need as much celery as in traditional chicken salad. 
    • Red onion - for color, flavor and crunch!

    Certainly, this is only a base recipe, you can feel free to make it your own with additions such as more spices, herbs, seeds, or toasted nuts.

    Ingredients

    • ¾ cup Greek yogurt full fat
    • 2 tbsp lemon juice
    • 2 tbsp olive oil
    • 1 tbsp dijon mustard
    • 1 tbsp dill
    • 1 tbsp honey
    • ½ tsp pepper
    • ½ tsp salt
    • 1 ½ cup cooked chopped chicken
    • 1 cup English cucumber chopped
    • 1 rib celery chopped
    • ½ red onion chopped

    Instructions

    • In a medium-sized bowl, whisk together Greek yogurt, lemon juice, olive oil, dijon mustard, dill, honey, pepper, and salt until combined.
    • To the same bowl, add the chicken, cucumber, celery, and red onion. Mix until well combined.
    • Allow the flavors to meld in the fridge for about 30 minutes before serving.
