Ingredients
- Jumbo shrimp: thawed, peeled, and deveined. You can use fresh or frozen just be sure to thaw them completely by running them under cold water before marinating them.
- Garlic: for garlicky flavor. Texas Roadhouse’s shrimp taste very garlicky.
- Olive oil: olive oil keeps your shrimp hydraged so that they don’t get dry on the grill.
- Parsley: for flavor and texture - Italian parsley is preferable here but regular parsley also works.
- Lemon juice: the acid from fresh lemon juice in seafood just isn’t optional, it’s a must!
- Spices: cumin, salt, and lemon pepper. Be aware that some brands of lemon pepper are very salty, and some aren’t, so be sure to take that into consideration when seasoning your shrimp.
Instructions
Step 1: Add the shrimp to a bowl and toss with the other ingredients: minced garlic, olive oil, chopped parsley, fresh lemon juice, cumin, kosher salt, and lemon pepper. Set it aside for at least ten minutes.
Step 2: Preheat a cleaned, oiled grill to 350 degrees Fahrenheit. Thread the shrimp on skewers, leaving some space between them.
Step 3: Grill the skewers for 2-3 minutes on each side.
Step 4: Take a look at the shrimp, do they look opaque and have a slight curl? They’re done! Remove them from the grill!
Step 5: Serve immediately!
Substitutions
- Jumbo shrimp: you don’t have to use jumbo shrimp, you can use whatever size shrimp you have, just be sure to cook them for more or less time depending on the size. Shrimp are done cooking when they curl up and become opaque.
- Garlic: you can swap the fresh garlic for 1 tsp of garlic granules/granulated garlic.
- Olive oil: you can use any neutral flavored oil.
- Parsley: you can use ½ tsp of dried parsley or Italian seasoning.
Equipment
It's nice to have metal or bamboo skewers for this recipe. You can get metal skewers here and bamboo skewers here.
Storage + reheating
STORAGE AND LEFTOVERS: Leftovers can be stored in the refrigerator in an airtight container for up to 3 days.
If you don't have an airtight container, wrap the leftovers tightly in foil and then seal them in a plastic bag and place into the fridge for 3 days.
REHEATING: You can reheat leftovers by warming them in a pan over medium heat (for a few minutes) with a splash of water, oil, or broth.
TIP: Be sure not to overcook your shrimp. They're finished cooking when they curl slightly and become opaque. Shrimp are finished cooking when the internal temperature reaches 145 degrees Fahrenheit.
