    I love to use this to make this green bean casserole because it cuts down on dishes and delivers even heat.  Making it perfect for starting on the stovetop and then transferring it straight to the oven.

    Also, as a person who used to be consistently low on my iron intake, switching to cast iron for cooking has helped with my energy levels.

    Ingredients

    • Fresh green beans: The star of the dish, they provide crunch and freshness.
    • Olive oil: Adds a subtle depth to the sautéed onions and mushrooms while keeping the vegetables from sticking.
    • Onion: Softens and sweetens as it cooks, giving the casserole a solid flavor base.
    • Mushrooms: Bring an earthy, meaty texture that complements the creaminess of the sauce.
    • Italian seasoning: A simple blend that adds herby notes without overpowering the other flavors.
    • Butter: Essential for building the roux and giving the sauce a rich flavor and texture.
    • Flour: Thickens the sauce so it clings to the beans and mushrooms.
    • Chicken broth: Adds savory depth and keeps the sauce from being too heavy.
    • Heavy cream: Makes the sauce creamy and luxurious, without being overly thick.
    • Parmesan: Provides sharp, nutty flavor that boosts the overall taste of the casserole.
    • Worcestershire sauce: Adds umami and subtle tang, rounding out the creaminess.
    • Kosher salt + Pepper: for flavor, season to taste.
    • French fried onions: you need this ingredient, you simply can't have a classic green bean casserole without them!

    One of the things I love about this fresh green bean casserole is how easy it is to shop for—especially if you hit up Trader Joe’s. I picked up every ingredient there, and it makes life easier.

    They sell pre cut and cleaned fresh green beans, as well as pre-sliced mushrooms. Other than your pantry staples this is definitely a TJ's-friendly holiday recipe.

    Fresh Green Bean Casserole

    This fresh green bean casserole is creamy, crunchy, and made from scratch (except for the French fried onions)—no canned soup in sight! It’s the ultimate comfort food side dish that feels classic but tastes brighter and fresher.

    Ingredients

    • 2 tbsp olive oil
    • 1 onion finely chopped
    • 8 oz mushrooms sliced thin
    • 1 lb fresh green beans trimmed and cut into 2-inch pieces
    • ½ tbsp Italian seasoning
    • 3 tbsp butter
    • 2 tbsp flour all purpose
    • 1 cup chicken broth
    • 1 cup heavy cream
    • ¼ cup parmesan cheese freshly grated
    • 1 tbsp Worcestershire sauce
    • 1 tsp kosher salt
    • ½ tsp pepper
    • 1 ½ cups crispy French fried onions divided

    Instructions

    • Preheat your oven to 400 degrees Fahrenheit.
    • In a large, oven-safe skillet, cast iron, or dutch oven, heat the olive oil over medium heat and add the chopped onions and mushrooms. Saute for 5 minutes. Stir in the Italian seasoning and stir for another minute to wake up those spices.
    • Add the green beans and continue to cook for another 5 minutes, they’ll begin to soften slightly.
    • Now add the butter, stir until it melts and then add the flour and stir until everything is coated and stir for 2 minutes (to remove the raw flour taste).
    • Add the chicken broth and bring it to a simmer.
    • Add the heavy cream and parmesan.
    • Turn the heat off and add the Worcestershire sauce, salt and pepper, and ½ cup of the crispy French fried onions. Toss until everything is combined.
    • Top with the rest of the crispy French fried onions and bake in the oven for 15-20 minutes, or until bubbly and golden on top. Serve immediately!
