Fresh Green Bean Casserole

This fresh green bean casserole is creamy, crunchy, and made from scratch (except for the French fried onions)—no canned soup in sight! It’s the ultimate comfort food side dish that feels classic but tastes brighter and fresher.

Ingredients

  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 8 oz mushrooms sliced thin
  • 1 lb fresh green beans trimmed and cut into 2-inch pieces
  • ½ tbsp Italian seasoning
  • 3 tbsp butter
  • 2 tbsp flour all purpose
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¼ cup parmesan cheese freshly grated
  • 1 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 1 ½ cups crispy French fried onions divided

Instructions

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a large, oven-safe skillet, cast iron, or dutch oven, heat the olive oil over medium heat and add the chopped onions and mushrooms. Saute for 5 minutes. Stir in the Italian seasoning and stir for another minute to wake up those spices.
  • Add the green beans and continue to cook for another 5 minutes, they’ll begin to soften slightly.
  • Now add the butter, stir until it melts and then add the flour and stir until everything is coated and stir for 2 minutes (to remove the raw flour taste).
  • Add the chicken broth and bring it to a simmer.
  • Add the heavy cream and parmesan.
  • Turn the heat off and add the Worcestershire sauce, salt and pepper, and ½ cup of the crispy French fried onions. Toss until everything is combined.
  • Top with the rest of the crispy French fried onions and bake in the oven for 15-20 minutes, or until bubbly and golden on top. Serve immediately!
