    Blender Fire Roasted Tomato Salsa

    There’s no condiment that gets me more excited about dinner than this super quick blender salsa.

    To say that I'm the biggest fan of a quick, fresh salsa is an understatement. Does it make a quick appetizer? Yes. Is it perfect for almost any kind of taco? Also yes.

    Those are enough reasons to run to the kitchen and make this quickie salsa!

    Ingredients + substitutions

    Why use canned fire roasted tomatoes rather than fresh?

    I’m almost always grabbing a can of Muir Glen Diced Fire Roasted Tomatoes. You can find them almost anywhere but sometimes I find that if I know I need them, I’ll pop by Whole Foods or a more upscale grocery store.   

    The reason that I love using canned fire roasted tomatoes (and especially Muir Glen), is because you get a smoky depth of flavor that you just can’t get from raw tomatoes. Not only does using canned make things quicker, but you’re going to get a consistent taste across the board.

    The other ingredients + what you might want to substitute them with

    • Lime juice - I like to grab a big juicy lime and just squeeze it right into the blender.  However, fresh limes can be hard to find in the winter, so feel free to swap this for about a tablespoon of bottled if you’d like. 
    • Cilantro - my favorite way to do this is to grab a little bundle of it at the grocery store and chop it up, but you can swap the fresh cilantro for dry cilantro.  If you do this, do not, I repeat DO NOT, use a 1:1 ratio.  Just use a tablespoon of the dried stuff.  
    • Jalapeno - remove the seeds just to be sure it’s not too spicy. You can always add more to taste, later. 
    • Red onion - I like to use a red onion for the color and flavor.  But you can use whatever onion you have on hand.  
    • Garlic - I like to use fresh, but lately I find myself reaching for the little frozen cubes from Trader Joe’s.  You can use whatever garlic you have, use about 2 teaspoons. 
    • Sugar - just a little to cut down on the acidity of the tomatoes and it adds a little sweetness. 
    • Spices - chili powder, cumin, and salt.  You could also add a little smoked paprika, that would be a nice addition to the spices I’ve used!

    How do you make it? Simply combine all of these ingredients right into a blender. Pulse it until you like the consistency. Some like it on the smoother side (my daughter won't eat chunky salsa, it has to be smooth), I'm team smooth salsa.

    What blender to use?

    Any blender, or even a food processor, it doesn't have to be high powered or expensive. I have a Beast Blender and I'm in love with it - I'm sure you will be, too!

    Ingredients

    • 1 15 oz can fire roasted tomatoes preferably Muir Glen brand
    • 1 lime juiced
    • ½ cup cilantro
    • ½ jalapeno seeds removed
    • ½ red onion
    • 2 garlic cloves
    • 1 tsp sugar
    • ½ tsp chili powder
    • ½ tsp cumin
    • ½ tsp salt

    Instructions

    • Very simply combine all of the ingredients into a blender.
    • Pulse until desired consistency is reached.
    • That’s it! You can go ahead and serve it right away, or allow the flavors to develop in the refrigerator for 20 minutes before serving.
