Refreshing, unexpected, and a little bit savory—this Strawberry Balsamic Basil Mocktail brings serious depth without the booze.

This mocktail is the kind of drink that surprises you in the best way: it's herbaceous, slightly tangy, and perfectly balanced. Ideal for slow afternoons or anytime you want something nuanced but alcohol-free.

    The process

The process is pretty easy, for the video tutorial you can head over to my Instagram for the video version, or just follow these simple steps:

Process shots with labels for the strawberry balsamic basil mocktail.
    • Add the strawberries, basil, honey, and balsamic vinegar to a glass.  Muddle until the mixture is smooth.
    • Fill the glass with ice.
    • Top with soda water and add a lime wedge for garnish and for squeezing.  Maybe garnish with an extra basil leaf as well!
Ingredients for the strawberry basil balsamic mocktail.

    A few quick tips...

    • Use ripe, in-season strawberries for the best flavor—juicier berries mean a smoother muddle and a naturally sweeter base.
    • Don’t skip the muddling step—gently crushing the basil releases its essential oils, which brings out its full aroma without making it bitter.
    • Add soda water last and stir gently to preserve the fizz and avoid diluting the vibrant flavor of the muddled mix.

    Ingredients + substitutions

    • Strawberries – Sweet, fruity, and perfect for this drink because they have health benefits and taste delicious.
    • Basil leaves – Fresh and slightly peppery, basil adds an herbal twist that balances the sweetness of the strawberries.  Also, they add a bit of complexity.  If you don't have or don't want to use basil, you can leave it out or swap it for mint leaves, those will work, too!
    • Honey – Natural and smooth, honey brings a gentle sweetness that ties the flavors together.
    • Balsamic vinegar – Tangy and rich, balsamic adds depth and a subtle nuance that makes this mocktail feel elevated.
    • Soda water – Light and bubbly, soda water (or even kombucha if you want a lot of flavor) works to fill out this drink.
    • Lime wedge – For brightness and citrus flavor!
