    Air Fryer Sweet Potato Fries with Diane Dip

    Air Fryer Sweet Potato Fries with Diane Dip is easy to make, quick, unique, delicious, and seriously addicting!  You know that Diane sauce that you dip your steak into?? Well, now it’s a dip! And pairs insanely well with sweet potato fries! You MUST give it a try!

    HOW DO YOU AIR FRY SWEET POTATO FRIES

    First, you’ll need an air fryer.  I have two that I like and recommend.  

    The first one that I’ll discuss is the Ninja XL Air Fryer.   I like and recommend this one. This is pretty much the only air fryer that I use. 

    That said, I fully recommend the Ninja XL Air Fryer.  I have a family of 5 and I feel that this one really gets the job done.  However, I also have the Instant Pot Air Fryer Lid that I *sometimes* use.  It’s a nice gadget and it really works just as well. I just don’t love it as much as the Ninja XL Air Fryer. 

    Now, assuming you already have an air fryer, the recipe is simple, requiring just three ingredients: sweet potatoes, olive oil, and sea salt.  

    Why sea salt you ask? I always use sea salt, unless you’re paranoid that you might get a goiter, I don’t like iodized salt, it gives your food a metallic taste (in my opinion). 

    This is the brand of salt that I use, and like 🙂

    You simply slice the potatoes into sticks - ¼-½ inch thick, and then toss them with olive oil and salt and then put them into the air fryer.  Don’t let them touch, so you may have to work in small batches.

    WHAT IS DIANE DIP?

    Well to be perfectly honest, I feel that what you’re dipping your fries into is way more important that what you season your fries with.  That’s why these fries are just three simple ingredients: sweet potatoes, olive oil, and sea salt. This way, the dip can really shine. 

    Diane Dip, as far as I’m aware, didn’t exist before today.  You’ll be most acquainted with this flavor profile in the popular dish, Steak Diane.   Which I just may make in the coming weeks...

    Well anyway, I couldn’t get Diane sauce out of my head and I thought, maybe...maybe...it would make a good dip.  And voila! I created it, it tasted great.

    And to be honest, I’m not a fan of ketchup so that’s not even a dipping option that I usually consider when making fries or anything that would require a dipping sauce.

    HOW DO YOU MAKE DIANE DIP?

    It’s very, very simple to make. 

    First, you’ll saute a whole shallot in some butter.  

    Second, you’ll add Brandy and bring it to a simmer for 60 seconds and remove it from the heat.  

    Third, and finally, you’ll add mayo to a bowl, add some dijon mustard and pepper, then fold in the sautéed shallot, butter, and Brandy mixture. 
    So. Easy.  You’ll wonder why you haven’t been doing this your whole life. 

    It tastes like an elevated onion dip. But with the flavor profile of the classic Diane sauce.

    Equipment

    • Air Fryer

    Ingredients
      

    FOR THE SWEET POTATO FRIES

    • 2 large sweet potatoes cut into ¼-1/2 inch sticks
    • 3 tbsp olive oil extra virgin
    • 1 tbsp coarse sea salt

    FOR THE DIANE SAUCE

    • 1 tbsp shallot minced
    • 1 tbsp butter
    • ¼ cup Brandy *any kind you like is fine
    • ½ cup mayo *or sour cream/greek yogurt

    Instructions
     

    FOR THE SWEET POTATO FRIES

    • Wash and cut your sweet potatoes into ¼-1/2 inch sticks.
    • Toss the sticks with olive oil and sea salt and place them into the air fryer (no need to preheat). Make sure they're not stacked, you may need to work in batches.
    • Turn the air fryer to "air fry" or 425°F. Close the basket and set the timer for 10-13 minutes, flipping halfway through. Repeat until all the fries are finished.

    FOR THE DIANE SAUCE

    • While your fries are cooking, mince your shallot and put it into a small pan over medium heat with the butter. Saute until fragrant, about 3-5 minutes.
    • Add the Brandy, and bring it to a simmer for 2 minutes, take it off the heat.
    • In a small serving bowl, add the mayo (or sour cream, or greek yogurt), and then add the contents of the saucepan, and stir until combined.
    • Serve the Diane Dip with the fries and enjoy immediately!
