Optional toppings: whipped cream, pumpkin pie spice
Instructions
FOR THE BOBA
In a small saucepan, combine the water, boba, and cook according to package directions.
Remove the boba pearls from the water, rinse them under cold water, and add them to the pumpkin spice syrup.
FOR THE DRINK
Add additional pumpkin spice syrup to the bottom of a glass and the sides of the glass, then add the boba pearls (that are soaking in syrup).
Add the milk to the glass. Give it a gentle stir.
Top with whipped cream, pumpkin pie spice, and garnish with a few extra boba pearls if desired.

PUMPKIN SPICE COFFEE SYRUP: INGREDIENTS 1 cup filtered water ¾ cup dark brown sugar 3 cup pumpkin purée 1 tbsp pumpkin pie spice 1 tsp vanilla extractINSTRUCTIONS: Add all of the ingredients except the vanilla extra into a saucepan over medium heat, bring it to a simmer.Whisk until the sugar is dissolved (about 5 minutes).Then remove it from the heat and add the vanilla extract.Strain through a cheesecloth to get rid of the grittiness from the spice (or skip this step if that kind of thing doesn’t bother you).Let it cool to room temperature and use it in hot or iced coffee.Store in an airtight container (a mason jar is best) for 3 weeks.
