Ingredients

POMEGRANATE SYRUP

  • ½ cup honey
  • ½ cup pomegranate juice
  • 1 rosemary sprig

GINGER BEER MOCKTAIL

  • 2 tbsp pomegranate syrup cooled
  • ½ cup fresh orange juice
  • ginger beer as needed, to taste

Instructions

  • Make the pomegranate syrup by combining the honey, pomegranate juice, and rosemary sprig to a saucepan. Bring it to a boil and then turn the heat down and simmer it for 90 seconds. Remove it from the heat and allow it to cool (it’ll thicken a little as it cools).
  • To make the mocktail, fill a short glass with ice.
  • Then add 2 tablespoons of cooled pomegranate syrup to the glass. Then add the orange juice.
  • Top with a few splashes of ginger beer. Taste it, then add more ginger beer if you’d like. Enjoy.

Notes

Store the leftover pomegranate syrup in a mason jar with a tight light in the refrigerator for a week.
