Ingredients
¼cupsmoothcreamy peanut butter
¼cupsoy sauce
2tbsplime juicefresh
2tbsphoney
1tbspsesame oil
1tspfresh gingerif you're using dry ground ginger, use ½ tsp or less
Wateras needed to thin the sauce
1lbflank steak
2tbspoil
Cilantrogreen onions, lime wedges
Instructions
Put together the peanut sauce by combining the creamy peanut butter, soy sauce, lime juice, honey, sesame oil, and ginger in a bowl or large pyrex. Whisk it together, adding a tablespoon of cold water at a time until it reaches the consistency you like.
Next add a few tablespoons to a bag with your flank steak and allow it to marinate for 20 minutes.
Add oil to a large cast iron pan over medium-high heat, then sear the flank steak on each side for 3-5 minutes or until the internal temperature reaches about 135 degrees F. Remove it from the pan and tent with foil for about 5-10 minutes.
Slice the flank steak against the grain, and serve with the peanut sauce, chopped cilantro, green onions, and lime wedges.
