Flank Steak with Peanut Sauce

Ingredients

  • ¼ cup smooth creamy peanut butter
  • ¼ cup soy sauce
  • 2 tbsp lime juice fresh
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger if you're using dry ground ginger, use ½ tsp or less
  • Water as needed to thin the sauce
  • 1 lb flank steak
  • 2 tbsp oil
  • Cilantro green onions, lime wedges

Instructions

  • Put together the peanut sauce by combining the creamy peanut butter, soy sauce, lime juice, honey, sesame oil, and ginger in a bowl or large pyrex. Whisk it together, adding a tablespoon of cold water at a time until it reaches the consistency you like.
  • Next add a few tablespoons to a bag with your flank steak and allow it to marinate for 20 minutes.
  • Add oil to a large cast iron pan over medium-high heat, then sear the flank steak on each side for 3-5 minutes or until the internal temperature reaches about 135 degrees F. Remove it from the pan and tent with foil for about 5-10 minutes.
  • Slice the flank steak against the grain, and serve with the peanut sauce, chopped cilantro, green onions, and lime wedges.
