Sour Cream and Chive Mashed Potatoes

These elevated, fully, tangy mashed potatoes are perfect for your Thanksgiving table! Or served with any main, they're obsession worthy!

Ingredients

  • 2.5 pounds Yukon Gold potatoes peeled and cut into cubes
  • 1 tbsp kosher salt for your water
  • cup sour cream
  • ¼ cup milk warmed
  • 3 tbsp butter melted
  • 2 tbsp fresh chives chopped
  • Salt and pepper to taste use kosher salt

Instructions

  • Add the cubed potatoes to a large pot and fill it 2 inches above the potatoes.
  • Add the kosher salt.
  • Bring it to a boil and boil for 15-20 minutes, or until the potatoes are fork tender.
  • Drain the water and return the potatoes to the same pot.
  • Add the sour cream, warm milk, and melted butter.
  • Mash the potatoes until they’re smooth.
  • Top the potatoes with chopped chives and salt and pepper. Maybe even a few pats of butter or an extra dollop of sour cream, if you wish.
