Lemon and Dill Boursin Salmon

Easy.  Weeknight.  Dinner.  Say it louder! This incredibly easy, creamy, Lemon and Dill Boursin Salmon is the perfect quick dinner!!

Ingredients

  • 4 salmon filets BBQ cut style
  • 1 pinch salt *kosher is preferable
  • 1 pinch pepper
  • 2 tbsp olive oil or any neutral-tasting oil
  • 2 tbsp butter
  • 2 cloves garlic minced
  • ¾ cup chicken broth
  • 1 wheel of Boursin cheese garlic and herb is preferable
  • 2 tbsp lemon juice
  • 2 tbsp fresh dill minced

Instructions

  • Generously salt and pepper your salmon filets on each side.
  • In a medium or large pan over medium high heat, add olive oil and sear the salmon filets on each side for about 3-5 minutes. This will depend on the thickness of your filets.
  • Remove the salmon from the pan and tent with foil.
  • Turn the heat down to low and add the butter, and minced garlic. Give it a stir for a minute or until just fragrant.
  • Add the chicken broth to deglaze the pan - and then add the wheel of Boursin cheese. Stir it around and break it up until it melts and you’re left with a creamy, smooth sauce.
  • Add the lemon juice and minced dill.
  • Return the salmon to the pan and spoon the sauce over the salmon filets.
  • Garnish with some lemon wedges (if desired). Serve.
