Ingredients
2lbgreen beanstrimmed + cleaned
2tbspolive oil
½tspEACH: salt + pepper
2clovesgarlicminced
2tbspbutter
2tbspflour
1cupchicken brothor vegetable
1wheelGarlic & Fine Herbs Boursin cheese
¼cupheavy cream
1cupFrench fried onions
Instructions
Preheat your oven to 375 degrees F.
BLANCH
First, blanch your green beans by bringing a pot of salted water to a boil and add the green beans for 4 minutes, they’ll turn bright green.
Drain them into a colander and run cold water over them. No need for bowls of ice water, just use cold water from the tap to make things easy.
SAUTE
Drizzle olive oil into a pan, add the blanched green beans, season with salt and pepper then saute over medium-high heat in a large, oven-safe pan for 3 minutes.
Add the minced garlic, stir it until fragrant.
Add the butter, once it melts add the flour and stir it around for 2-3 minutes.
Add the broth and when it starts to bubble turn the heat down to low and add the wheel of Boursin until it melts.
Add the heavy cream and turn the heat off.
Sprinkle the French fried onions on top.
BAKE
Bake for 15-20 minutes. Or until the top is golden brown and bubbly.
Notes
NOTE: If your French fried onions brown too quickly, cover them with foil to prevent them from getting too crispy. I've noticed that different brands behave differently, just be sure to keep an eye on things.
