Ingredients

  • 3 bell peppers any color
  • 2 small yellow onions or one large onion
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions

  • Preheat your air fryer at 390 degrees F (this is the AIR FRY setting).
  • Slice your peppers and onions ½ inch thick, toss them with the olive oil and spices.
  • Toss them into the preheated air fryer basket, set the timer for 10 minutes.
  • Give the basket a shake and set for another 5 minutes. Or until they're finished cooking (they'll be somewhat firm, if you like them more "done" continue to cook checking at one minute intervals).

Notes

Some notes: they’ll cook faster if your air fryer basket is on the larger side.  If they’re piled on top of each other they’ll take a little longer.  Just watch them and be smart about it, keep checking them so that they don’t burn. 
Leftovers and Storage: Store leftovers in an airtight container for up to three days.  
Reheating: Place the leftovers in the air fryer basket and reheat on 300 degrees F for 3-5 minutes or until warmed throughout.
