Ingredients

  • 1 ½ - 2 pouns fresh or frozen chicken wings
  • 5 cups water
  • ½ cup granulated sugar
  • ½ cup kosher salt
  • 2 tbsp lemon juice
  • 2 tbsp soy sauce
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp peppercorns
  • 2 sprigs fresh thyme or other fresh herb

Instructions

  • In a pot over medium heat, continuously stir all ingredients until the salt and sugar dissolves.
  • Remove from the heat and cool to room temperature.
  • Pour the brine into a large bag over 1 ½- 2 pounds of fresh or frozen chicken wings. Allow to rest in the refrigerator for 4-24 hours before preparing.
