Ingredients

FOR THE SALMON CAKES

  • ¾ lb salmon skin removed, shredded
  • 1 egg
  • 2 garlic cloves minced
  • ½ green bell pepper diced
  • ½ small onion diced
  • ½ cup Panko
  • ¼ cup mayo
  • 1 tbsp fresh dill or you can use ½ tsp dry dill (a little goes a long way with dry dill)
  • 1 tbsp fresh lemon juice
  • 1 tbsp seafood seasoning Old Bay
  • Cooking spray as needed

FOR THE LEMON DILL SAUCE

  • ½ cup mayo or greek yogurt
  • 1 clove garlic peeled + minced
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh dill or ½ tsp dry
  • ½ tsp salt
  • ½ tsp pepper

Instructions

FOR THE SALMON CAKES

  • Remove the skin from the salmon and shred it into a bowl with your fingers. Add the egg, minced garlic, diced bell pepper, diced onion, Panko, mayo, dill, lemon juice and old bay. Stir until combined.
  • Using a ¼ cup measuring cup, scoop the mixture evenly and form 2-inch disc shaped patties and place them into a well greased air fryer basket. Make sure they’re not touching, you may need to work in batches. Give the tops of the patties a light spritz with cooking spray.
  • Close the air fryer basket and set to AIR FRY (390°F - no need to preheat) for 10-12 minutes, flipping halfway. Repeat until all of the salmon cakes are cooked.

FOR THE LEMON DILL SAUCE

  • Add the mayo (or greek yogurt) to a small bowl and stir in the minced garlic, fresh lemon juice, dill, salt and pepper. Cover and chill until ready to serve.

CAN I FREEZE THESE?
Yes, you can freeze these. After cooking, let them cool, then wrap them individually and place them into a freezer-safe bag.  They can be frozen up to 3 months. The lemon dill sauce can not be frozen. 
CAN I SAVE THESE IN THE FRIDGE?
In an airtight container these will stay fresh in the fridge for up to 3 days.  The lemon dill sauce will last for three days as well, covered.
