Air Fryer Sweet Potato Fries with Diane Dip is easy to make, quick, unique, delicious, and seriously addicting.  You know that Diane sauce that you dip your steak into sometimes? Well, now it’s a dip, and pairs insanely well with sweet potato fries!

Ingredients

FOR THE SWEET POTATO FRIES

  • 2 large sweet potatoes cut into ¼-1/2 inch sticks
  • 3 tbsp olive oil extra virgin
  • 1 tbsp coarse sea salt

FOR THE DIANE SAUCE

  • 1 tbsp shallot minced
  • 1 tbsp butter
  • ¼ cup Brandy *any kind you like is fine
  • ½ cup mayo *or sour cream/greek yogurt

Instructions

FOR THE SWEET POTATO FRIES

  • Wash and cut your sweet potatoes into ¼-1/2 inch sticks.
  • Toss the sticks with olive oil and sea salt and place them into the air fryer (no need to preheat). Make sure they're not stacked, you may need to work in batches.
  • Turn the air fryer to "air fry" or 425°F. Close the basket and set the timer for 10-13 minutes, flipping halfway through. Repeat until all the fries are finished.

FOR THE DIANE SAUCE

  • While your fries are cooking, mince your shallot and put it into a small pan over medium heat with the butter. Saute until fragrant, about 3-5 minutes.
  • Add the Brandy, and bring it to a simmer for 2 minutes, take it off the heat.
  • In a small serving bowl, add the mayo (or sour cream, or greek yogurt), and then add the contents of the saucepan, and stir until combined.
  • Serve the Diane Dip with the fries and enjoy immediately!
