Some of you have reached out and asked me for recipes using pantry staples, and of course–filling, protein-packed, meatless recipes like this white bean dip.  Many of you, and not by choice, are eating mostly vegetarian these days, and if you have any questions or want some tips on swapping ingredients in recipes, please reach out to me and I’ll do my best to get back to you and help you with tips.

PANTRY STAPLE LEMONY WHITE BEAN DIP

Pantry staple lemony white bean dip is pretty easy, and it’s a great way to use that can of white beans that have been in your pantry forever but you’ve never known what to do with.  

This dip contains only five simple ingredients:

White beans (like cannellini or great northern or navy)
Garlic cloves
Lemon juice
Dry thyme
And salt.  

That’s all you need to create a filling dip that goes well on top of salads, with crackers, veggies, or in wraps.

HOW TO MAKE THIS WHITE BEAN DIP

To make this dip, you’re going to bring the beans, the liquid from the can, and the garlic cloves to a boil, then drain and discard the excess water.  Transfer the beans and garlic to a blender or food processor with the rest of the ingredients and then pulse until it’s completely smooth.

If you don’t have a blender or food processor, then feel free to just mash everything together with a fork.  It doesn’t have to be fancy.

TOPPING SUGGESTIONS

To serve, I suggest spreading the dip into a bowl and topping with some quality olive oil and a pinch of red pepper flakes or smoked paprika, but this step is optional, it’s delicious as it is.

This lemony white bean dip is easy and can be made entirely with pantry staples!

Ingredients
 
 

  • 1 15 ounce can white beans (plus the liquid from the can) cannellini, great northern, or navy
  • 4 garlic cloves
  • 1/2 tsp dried thyme
  • 2 tbsp lemon juice
  • salt to taste

Instructions
 

  • Add the beans, liquid from the can, and garlic clove to a small pot and bring to a boil (add more water if necessary. Discard any excess liquid and put the beans and garlic into a blender or food processor.
  • Add the dried thyme, lemon juice, anda pinch of salt to the blender or food processor and pulse until smooth.
  • Serve topped with olive oil, red pepper flakes, and smoked paprika if desired.

Notes

OPTIONAL TOPPINGS: Olive oil, red pepper flakes, smoked paprika.
*Leftovers will save in the fridge for about a week.
