This is a vegan eggs benedict breakfast sandwich--egg-less Benedict, more like!

This vegan breakfast sandwich is so good, easily meal prepped, and it’s pretty much just a traditional eggs benedict, in an on-the-go fashion.
Who needs a quick breakfast on the go, that’s super quick to put together? Uh, me!
Who needs something they can prep at the beginning of the week and then throw together in the mornings that will keep them full until lunchtime? Also, me.
Plus, you’ll be shocked at how legit this sandwich dripping with vegan hollandaise sauce tastes! Truly, I’ve fooled people into thinking it’s the “real” thing.
HOW TO MAKE THE VEGAN EGGS BENEDICT BREAKFAST SANDWICH

This vegan breakfast sandwich is perfect. It requires a little prep, but it’s the perfect make-ahead breakfast. And when I say perfect, I do mean perfect. Who doesn’t want to wake up to tempeh bacon and hollandaise sauce with veggies of your choice on an english muffin.
I recommend making the vegan hollandaise sauce and the tempeh bacon ahead of time. That will make the process quick, painless, and easy.
This breakfast sandwich contains:
Tempeh Bacon
Vegan Hollandaise Sauce
Spinach
Tomato
English muffins (I like Ezekial brand)
It’s really easy to make and I like to do this as a meal prep and eat it throughout the week. You can make it all at once, or you can meal prep it ahead of time as I do.

Vegan Eggs Benedict Breakfast Sandwich
Ingredients
- 8 oz prepared tempeh bacon
- 1 batch prepared vegan hollandaise sauce
- 1 cup fresh spinach
- 1 large tomato sliced
- 4 english muffins toasted and sliced
Instructions
- Prepare your tempeh bacon and hollandaise sauce.
- Slice and toast four english muffins. Layer the warm tempeh bacon, hollandaise sauce, spinach, and tomato equally between each muffin. Serve while it's still hot!
