I hope you’re all are starting January out with a bang, I know many people kick off the new year with a hangover and a handful of resolutions.
Usually one of these just so happens to be to eat more vegetables and many of you are participating in Veganuary! Which I think is amazing because it’s great for your health and the health of the planet.
EASY PICKLED RED ONIONS AND CABBAGE
These easy pickled red onions and cabbage are the topping that my tacos, salads, and burgers have been missing! I’m so glad that I’ve finally jumped on board the pickled veggies train because these are incredible, they add a little spicy tang, and they look amazing–seriously, they’re so pretty.
These pickled red onions and cabbage do not require any boiling. As the name suggests–they’re so easy! You’re just going to combine all of your ingredients into a jar, add your sliced onions and cabbage, make sure that everything is well-combined, and set aside for a few hours.
You don’t need any special equipment for this recipe. You only need the ingredients to make the recipe, plus a jar (I used this jar and you can get it right here).

Quick Pickled Red Onion and Cabbage
- 1 cup red cabbage thinly sliced
- 1 red onion thinly sliced
- 2 garlic cloves minced
- 1/2 cup white vinegar
- 1 tbsp pure maple syrup or date sugar
- 1 juicy lime juiced
- 1/2 tsp red pepper flakes optional – for heat
- 1/2 tsp dried dill
- 1/2 tsp oregano
- In a clean jar, add all of the ingredients and combine well.
- Cover and store the jar in a warm, dark place for 2-4 hours then transfer to the refrigerator.
- Serve on burgers, salads, and tacos. Enjoy!
