Tacos are the best, right? You simply can’t go wrong with a good taco. They’re completely vegan, spicy, and smothered in a delicious avocado ranch sauce! With a little fresh cabbage and some chopped cilantro, you’ve got the best tacos ever on your hands!
These vegan buffalo cauliflower tacos with a cool ranch drizzle are perfection. You can't go wrong with tacos, and when cauliflower is the star ingredient. It's meaty, hearty, substantial, and indulgent when covered in a beer buffalo batter.

+ Vegan or vegetarian (depending on how you make the avocado ranch)

HOW TO MAKE BUFFALO CAULIFLOWER TACOS WITH AVOCADO RANCH
This recipe is fairly simple. To make the cauliflower you’ll need:
Cauliflower
Beer (or broth)
Flour
Frank’s Hot Sauce
Chili Powder
Garlic Powder
You’ll simply mix all of the ingredients into a bowl until it resembles pancake batter. Then you’ll break the cauliflower into bite-sized florets and roll them into the batter until they’re covered.
Then on a parchment-lined (or silicone mat) baking sheet, spread them out evenly. Bake. Flip. Done. Easy.
For the avocado ranch, you’ll need:
Avocado
White vinegar
Unsweetened yogurt
Almond milk
Mayo
Garlic powder
Onion powder
Cilantro
+ Lime juice.
Give all of the ingredients a whirl in a blender or food processor until it’s smooth. Then place in the fridge until you’re ready to pour it all over your tacos!

SUGGESESTED TOPPINGS
These tacos are amazing with:
Flour or corn tortillas (this recipe makes about 10 tacos)
Chopped cabbage
Chopped red onion
+ Cilantro.

Buffalo Cauliflower Tacos with Avocado Ranch
Equipment
- blender or food processor
Ingredients
FOR THE CAULIFLOWER
- 1 medium head cauliflower cut into bite-sized florets
- 1 cup beer corona is best or sub vegetable broth
- 1 cup all purpose flour
- 2 + 2 tbsp Frank's hot sauce reserve 2 tbsp hot sauce for brushing
- 1 tsp chili powder
- ½ tsp garlic powder
FOR THE AVOCADO RANCH
- 1 avocado skin and seed removed
- ½ cup unsweetened yogurt or cashew or coconut yogurt
- ¼ cup mayo *I used vegan mayo
- ¼ cup almond milk
- ¼ cup fresh cilantro
- 1 tsp white vinegar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 lime juiced
FOR SERVING
- 10 corn or flour tortillas
- 1 roma tomato diced, optional
- ½ cup chopped red cabbage optional
- ¼ cup chopped red onion optional
- ¼ cup chopped cilantro optional
Instructions
FOR THE CAULIFLOWER
- Preheat your oven to 425 degrees F.
- In a bowl, whisk together beer, flour, 2 tbsp Frank's hot sauce, chili powder, and garlic powder. It should resemble pancake batter. Add bite-sized cauliflower florets to the batter and toss until coated.
- Tap any excess batter off and place each battered cauliflower onto a sprayed parchemnt or silicone-lined baking sheet.
- Bake for 25 minutes, flipping halfway through. Once fully cooked, brush the remaining 2 tbsp hot sauce onto the cauliflower. While the cauliflower is baking, prep your avocado ranch and toppings!
FOR THE AVOCADO RANCH
- Add avocado, yogurt, mayo, almond milk, cilantro, vinegar, garlic and onion powder, and lime juice to a blender or food processor and blend until completely smooth.
FOR SERVING
- Add the cauliflower and desired toppings to warm tortillas, drizzle with avocado ranch, and serve!
