What ingredients do I need to make this recipe?
This is a pantry-staple friendly side dish, requiring just a few things:
- Russet potatoes
- Olive oil
- Butter +
What's the cooking process like?
The cooking process is so simple, since the air fryer does all of the work this is mostly hands-off.
- First you’ll wash your potatoes.
- Next you’re going to mix the olive oil, butter, thyme, parsley, salt and pepper together.
- Poke some holes in the potato skins with a fork and cover the potatoes in the mixtures.
- Place them into the air fryer, and let the air fryer do all the work!
No need to wrap anything in foil or flip, but depending on the size it’ll take about 30-40 minutes for your potatoes to finish cooking.
Medium potatoes take about 40 minutes and that’s about the size of the potatoes featured in this recipe.
How long should they take to cook?
Depending on the size it will take 30-40 minutes.
If your potatoes are small they’ll take about 30 minutes. Small potatoes are the size of an apple.
For medium–sized potatoes, it’ll take around 40 minutes. Medium potatoes are about the size of a man’s fist.
Large potatoes may take up to 50 minutes to cook, and large potatoes are comparable to the size of a hand.
Definitely try to use similar sizes when cooking because you don’t want to have different cooking times–it’ll just be much easier to use similar size potatoes.
You’ll know they’re done when you can easily pierce the sides with a fork without any resistance.
What is the best air fryer to use?
I have two air fryers so I’ll speak to the air fryers that I use and like.
The air fryer I recommend most is the Philips Air Fryer XL. It’s nice and roomy and I just love it! This air fryer will hold about 4 medium potatoes!
Additionally, I can recommend the Instant Pot Air Fryer Lid with a few caveats. It's nice to have, but I don’t use it as my main air fryer, it’s kind of small (it would only hold two potatoes), and if you’re on a budget, saving space, or only cooking for 1-2 people, this would be a great investment!
What substitutions can be made?
Red potatoes - you can use red potatoes no problem. Just use the same cooking times based on their size.
Yukon potatoes - these potatoes work as well. Again, just use the same time suggestions the recipe calls for depending on the size.
Butter - if you don’t want to use butter just leave it out and replace it with a little more olive oil.
Parsley and thyme - any dry spice will work, rosemary is a great substitution, and so is an Italian seasoning blend!

Air Fryer Baked Potatoes
- Air Fryer
- 4 medium russet potatoes
- 2 tbsp butter melted
- 2 tbsp olive oil extra virgin
- 1 tsp parsley dry
- 1 tsp thyme dry
- 1 tsp coarse salt
- 1 tsp pepper
- Clean the russet potatoes and poke holes in the skins with a fork.
- In a small bowl, stir together (melted) butter, olive oil, parsley, thyme, salt and pepper.
- Coat each potato in the mixture and place them into the basket of the air fryer (no need to preheat or grease the basket).
- Set the air fryer to AIR FRY (390°F) for 40 minutes.
- Check for done-ness by piecing with a fork, if there isn’t any resistance they’re done and ready to serve!
