As far as COVID- 19 goes, all I’ll say is that social distancing/self quarantine is a social responsibility that we must take seriously in order to keep ourselves, and especially others, safe.
My family and I are committed to staying home for a full two weeks and adhering to all of the guidelines set by the CDC. Of course we’ll still be seeing neighbors and checking our mailbox, but other than that, we plan to stay home and away from others for our own safety and the safety of others.
In order to protect yourself and others, the CDC recommends:
Washing your hands often and for 20 seconds
Avoiding close contact with those who are sick
Staying home if you’re sick
Cleaning and disinfecting daily (this includes doorknobs, countertops, frequently used surfaces, etc.)
Of course as a collective we're already doing these things daily, and many of you are on a self-imposed 14-day self isolation or quarantine. This is great!
With that in mind, many people are wondering--what should we eat for two whole weeks that's mostly shelf stable and easy to prepare?
I’ve pulled together (with the help of other recipe bloggers) 14 plant-based and vegetarian recipes using pantry staples! I find that I’m much more organized when it comes to meal planning and prep when I use a meal planning notepad, like this one.

Keep in mind, you can always get creative in the kitchen and create your own swaps if you’re out of an item!
